Spring has sprung here in Northern California. The sweet peas are blossoming, the snap peas are climbing, and I have peas on my brain!

Today I had a hankering for snow peas and cooked up a bunch this afternoon just for the heck of it. There are so many ways to prepare snow peas, the only thing you really don’t want to do is to over-cook them.

This is a simple stir-fry with pine nuts, garlic, sesame oil, and a little mint. What’s your favorite snow peas recipe?

Snow Peas with Pine Nuts and Mint Recipe

Ingredients

  • 2 tablespoons extra virgin olive oil
  • 1/2 pound snow peas, rinsed, dried, tips of the ends cut off, strings removed
  • 1/4 cup pine nuts
  • 1 clove garlic, minced
  • 1/4 teaspoon dark sesame oil
  • 10 large mint leaves, chopped

Method

1 Sauté snow peas, garlic, pine nuts: Heat olive oil in a large skillet on medium high heat. Add the snow peas, garlic, and pine nuts. Stir to coat with the oil. Cook for 1-2 minutes, stirring.

You do not want to overcook the snow peas or they will get limp. They should still be a little bit crunchy.

2 Remove from heat. Stir in the sesame oil and chopped mint leaves. Serve immediately.

California's Forgotten Pine Nuts

When my friend Charlie asked if I wanted some pine nuts, I said sure, but I was confused. We are a long way from the high desert home of the piñon pine. Uh, where on earth did you get them? "From around my house," he said. "They're all over. I'll bring you a gunnysack full of 'em." And so he did.

Charlie wasn't entirely sure what sort of pine he'd been collecting nuts from for years, but he thought—correctly—that they were digger pines. Pinus sabiniana, a tree now called the gray or bull pine because, apparently, the term "digger" wasn't real complimentary to the local Indians who once used these trees for pitch and for food. Gray pines are unmistakable: Huge, spare, almost wispy, sporting gigantic cones that can knock you out or even kill you if you are so unfortunate as to be underneath one when it falls. This cone is nearly the size of a toddler's head. Those are the nuts behind the cone. Aren't they cute?

Gray pines live only in California, and only inland. They ring the Central Valley and extend a little into Oregon. But you won't find them on the coast, or in any other state. They are NorCal's answer to the great piñon pines of the desert. Oh, and for all of you on the East Coast? Sorry man, but so far as I know there are no pines east the Mississippi that have large enough nuts to be worth collecting. If I am wrong, let me know.

Someday I will venture to the Great Basin to collect America's finest pine nuts, those of the piñon pine (Pinus edulis) and the single-leaf piñon (Pinus monophylla). Both are trees of the desert, and are common from Nevada to Utah and the Southwest states of Arizona and New Mexico. Keep in mind that more than 80 percent of the pine nuts eaten in American are actually from China and are from Korean pines.


Recipe: 40g Salad with Pine Nuts, Mint and Peas.

I do love vegetables, pretty much all of them, but sometimes I just don’t feel like steaming them or eating them au naturale, that’s the truth.

It’s on these days I yearn for something a bit more complicated and interesting, something to tempt my taste buds and excite the palate without adding to the hips.

Enter my 40g Salad … in all its limitless variations.

It’s basically 40g of a few different vegetables either cooked from the night before or fresh and raw, plus a little protein and sometimes even a little fruit like orange segments, all tossed together in a simple salad.

The 40g salad is eating at its most basic and healthy. By putting 6 or 7 main ingredients together with a couple of accents and a non-oil zingy dressing it really does the trick.

It’s quick, easy and a great use of leftovers. And I NEVER get sick of it!

Total Time:

Ingredients raw or cooked from the night before and cooled in the fridge.

Ingredients:

40g Chicken, lean – grilled and cubed

40g Pumpkin, torn into cubes

40g Snow Peas, steamed and cut in half

40g Carrot, sliced and boiled

40g Lettuce, any kind or rocket

2 springs of Mint Leaves, finely chopped

1 tbspn Apple Cider Vinegar

1 tspn Dijon Mustard (or Grain Mustard)

Steva, Salt and Pepper to taste

Method:

2. In a large bowl mix the vinegar, water, mustard, mint, stevia and salt and pepper.


Snow Peas with Pine Nuts & Mint Recipe

With Spring just around the corner our sweet local snow peas from off our farms will be blossoming and at optimum quality. There are so many ways to prepare snow peas, the only thing you really don’t want to do is to over-cook them. This is a simple stir-fry with pine nuts, garlic, sesame oil, and a little mint.

Ingredients
2 Tbsp olive oil
250g snow peas, rinsed, dried, tips of the ends cut off, strings removed
1/4 cup pine nuts
1 clove garlic, minced
1 teaspoon dark sesame oil
10 large mint leaves, chopped

Method
1 Heat olive oil in a large skillet on medium to high heat. Add the snow peas, garlic, and pine nuts. Stir to coat with the oil. Cook for 1-2 minutes, stirring. You do not want to overcook the snow peas or they will get limp. They should still be a little bit crunchy.

2 Remove from heat. Stir in the sesame oil and chopped mint leaves. Serve immediately.


Ingredients

Rinse snow peas, remove strings, and cut off ends. Cut in half crosswise and blanch 4 minutes in boiling salted water. Shock in cold water and drain.

Toast pine nuts in a pan with no fat until golden yellow. Grate the Parmesan.

Peel and finely chop the shallot and garlic. Heat oil in a pan and sweat shallots and garlic over medium heat. Reduce heat, add rice, and sauté well.

Add hot broth to slightly cover rice and bring to a low boil. As rice absorbs the liquid add the next ladle. Repeat until the broth has been used up and rice is al dente. Just before adding the last of the broth, mix in the snow peas. Then add pats of the butter, half the Parmesan, and the pine nuts. Stir and season with salt and pepper.

Divide the risotto between 6 plates and sprinkle with remaining Parmesan. Garnish as desired with basil to serve.

I haven’t really been a big fan of snow peas. They weren’t on the menu while I was growing up so it ws not a vegetable I was familiar with. Whenever I tried a recipe with snow peas as an ingredient, I always seemed to overcook them. No one likes limpy snow peas I have been told. So my family ate them raw in salads and I never gave cooking snow peas another thought – until today when I read Donna’s post on Spatulas, Corkscrews and Suitecases . Donna wrote an article ‘How to Cook with Snow Peas’ for Startcooking.com. If any one can write an article about snow peas, it would be Donna!

What an interesting and informative article! Donna explains how to choose and prepare snow peas and includes 10 sure ways to use them. I decided to try the Snow Peas with Garlic, Pine Nuts and Mint recipe and it turned out absolutely delicious! The snow peas were crunchy with the subtle flavour of garlic and pine nuts topped with fresh mint. Now I am looking forward to trying out the remaining 9 ways to use snow peas.

Ingredients

  • 12 ounces fusilli or other short pasta
  • ½ cup packed fresh flat-leaf parsley leaves
  • ¼ cup packed fresh mint leaves
  • 2 ounces pecorino Romano cheese, shredded (about 1/2 cup), plus more for serving
  • 2 cloves garlic
  • 2 cups frozen peas (from a 10-oz. pkg.), thawed, divided
  • ½ cup toasted pine nuts, divided
  • ¼ cup olive oil
  • ½ teaspoon kosher salt, plus more for water
  • ½ teaspoon freshly ground black pepper

Cook pasta in a large pot of generously salted water according to package directions for al dente. Reserve 1 cup cooking water. Drain pasta return it to pot.

Meanwhile, place parsley, mint, cheese, garlic, 1½ cups peas, and ¼ cup pine nuts in a food processor. Pulse until finely chopped. With processor running, drizzle in oil process until pesto is smooth, about 1 minute.

Add pesto, salt, pepper, ½ cup reserved cooking water, and remaining ½ cup peas to pasta in pot. Cook over medium, stirring constantly, until pasta is fully coated and warmed through, about 2 minutes. Add more reserved cooking water, 1 tablespoon at a time, to loosen sauce to desired consistency. Serve topped with remaining ¼ cup pine nuts and cheese.

Ingredients

fresh or thawed frozen peas, divided

Turkish or Syrian chile flakes (or less, depending on how spicy they are)

fresh basil leaves, coarsely torn

feta cheese, broken into chunks

Kosher salt and freshly ground white pepper

Instructions

Put the yogurt, 6 tablespoons of the olive oil, the garlic, and 2/3 cup of the peas in a food processor. Blitz to a uniform pale green sauce and transfer to a large mixing bowl.

Cook the pasta in plenty of salted boiling water until al dente. As the pasta cooks, heat the remaining olive oil in a small frying pan over medium heat. Add the pine nuts and chile flakes and fry for 4 minutes, until the nuts are golden and the oil is deep red. Also, heat the remaining peas in some boiling water, then drain.

Drain the cooked pasta into a colander, shake well to get rid of the water, and add the pasta gradually to the yogurt sauce adding it all at once may cause the yogurt to split. Add the warm peas, basil, feta, 1 teaspoon salt, and 1/2 teaspoon white pepper. Toss gently, transfer to individual bowls, and spoon over the pine nuts and their oil.

Low Carb Garlic Mint Snow Peas

Low Carb Garlic Mint Snow Peas. These could not be much easier but they do pack a great flavor punch and slivered on the diagonal they cook very quickly. I left these plain Jane but with the addition of a number of things you can change the flavor significantly. Add a splash of tamari or fish sauce or maybe just something you have and like. And if you happen to have Pili Nuts they are a great replacement for pine nuts with the same buttery high fat content. Low carb garlic mint snow peas are light refreshing side dish to any meal.

Easy pea pesto

At the risk of sounding like a teenager breaking up with her boyfriend, I’m so over the hardy greens that I’ve been seeing all winter (sorry kale and Brussels sprouts). It’s time for brighter, lighter flavors. Since we still have several weeks until spring greens show up at our farmer's market, I turn to my freezer. Helllllooo sweet peas. You’re so cute, and you’re always there for me when I need to punch up a soup, add color to a pasta, or get my five year old to eat something green.
