Tricolor fusilli with mushrooms, bacon and cheese sauce

The pasta is cooked according to the instructions on the package.
Peel an onion, finely chop it and put it to harden, together with the mushrooms, olive oil and wine over low heat, semi-covered for approx. 10 minutes, until the onion becomes translucent. Season with salt, pepper, nutmeg and paprika, then add the cooked pasta and chopped bacon, complete with approx. 250 ml of water and leave to cook, to combine the tastes of approx. 15 min, over medium heat, uncovered.
Meanwhile, prepare the cheese sauce: melted Gordon cheese, put in a generous bowl, add cream, starch, lukewarm water and wine, mix vigorously until a homogeneous sauce is obtained.
The sauce obtained is poured over the pasta mixture, seasoned with grated Parmesan cheese and left to cook for approx. 10 minutes on medium heat, uncovered, stirring constantly, so as not to make lumps.
The pasta is served hot seasoned with basil and extra grated Parmesan cheese!
