I promised Honestia two more eggplant recipes and I'm doing it :))
Something new and good from the Tunisian lands. I have had the recipe for about 5 years, I wrote it in the recipe book, but I can't find it anywhere on the net. It is harder to do with us because it has coriander, but it can be planted in summer and frozen for winter.
- 500 gr of ripe eggplant (I used frozen)
- 1 garlic
- 2 tablespoons olive oil
- the juice of a quarter of a lemon
- 2 tablespoons fresh coriander, finely chopped
- 1 teaspoon cumin (or for taste)
Preparation time: less than 60 minutes
RECIPE PREPARATION Zahluc - Tunisian eggplant salad:
Finely chop the eggplant or use a robot. I used the stick blender.
Add the rest of the ingredients and mix well.
Leave to cool for at least an hour to combine the flavors.
Serve with bread, toast or crackers.
